Winemaker and Winemaking
The winemaker is Florent Denieuil who has been with the property for over twenty years. The grapes are handpicked, and the wine undergoes traditional method production, with the bottles aged on their sides for 16 months to develop complexity and finesse.
The Vineyards
This Cremant is crafted from Chardonnay and Pinot Noir grapes sourced from northern Burgundy terroirs and made in the Maison Pascal Bouchard winery situated in the heart of the Chablis region in Burgundy. Pascal Bouchard is blessed with holdings in some of Chablis finest terroirs including several Premier Cru and Grand Cru plots. The viticultural practices include sustainable farming with some bottlings having organic certification. The ethos of this exciting producer is to showcase the unique terroir of the Chablis region and its ancient Kimmeridgian soils that were formed 150 million years ago when the area part of an ancient sea This unique terroir is integral to the character of Pascal Bouchard's wines, contributing to their signature flinty minerality and bright acidity.Pascal Bouchard emphasizes expressing the purity of the Chablis terroir. The winery employs state-of-the-art facilities, including temperature-controlled stainless-steel tanks ranging from 10 to 300 hectolitres, allowing for precise vinification. Some cuvées are aged in a cellar housing over a hundred 350-litre barrels, ensuring optimal conditions for each wine's development.
