Tasting Notes
On the nose, it presents an explosive bouquet of citrus and struck match, leading into flavours of ginger and spice on the palate. There is a core of delightful white peach fruit with a hint of spice and a chalky build, contributing to its excellent depth, richness, and length. The wine is characterized by electric acidity and focus, providing a lively and refreshing profile.
Winemaker and Winemaking
The winemaker and viticulturalist is Alexandre Cornu with his sister Isabelle who handles sales and administrative duties. The grapes are handpicked before gentle pressing. Alcoholic fermentation occurs predominantly in stainless steel tanks (85%) to preserve the wine's minerality and freshness, while 15% ferments in 1- to 4-year-old oak barrels to add subtle complexity. After fermentation, the wine is aged on fine lees for 10 months, with periodic stirring to enhance texture. The final blend undergoes an additional 2 months of aging in stainless steel to harmonize flavours
The Vineyards
Domaine Cornu is a family-owned estate located in the village of Magny-lès-Villers, nestled between Nuits-Saint-Georges and Beaune in the Côte-d'Or region of Burgundy. Established over four generations, the Domaine has been meticulously managed by Colette and Claude Cornu for the past four decades. Today, their son Alexandre makes the wine. From the southern part of Magny-lès-Villers, the 2 plots for the Hautes Cotes de Beaune are Castaing and Bully.
