Tasting Notes

 The nose is highly expressive with a bouquet dominated by citrus aromas and complemented by notes of brioche. The palate is round and balanced, revealing fullness and length. There is a smokiness with a flinty touch that lingers.

 

Winemaker and Winemaking

 The winemaker is Florent Denieuil. The vineyards are in northern Burgundy’s Yonne department. The vines are grown on southwest-facing slopes in the "Fourchaume" vineyard. The deep, calcareous clay soil features Kimmeridgian subsoil. After the grapes are pressed and the juices settled, the musts are fermented in temperature-controlled stainless-steel tanks (70%) and oak barrels (30%). Once fermentation is complete, the wines are aged on fine lees in the same recipients for approximately 10 months. Before being bottled, they are blended and undergo a final period of ageing in stainless steel tanks.

 

The Vineyards

 Pascal Bouchard is blessed with holdings in some of Chablis finest terroirs including several Premier Cru and Grand Cru plots. The viticultural practices include sustainable farming with some bottlings having organic certification. The ethos is to showcase the unique terroir of the Chablis region and its ancient Kimmeridgian soils that were formed 150 million years ago when the area part of an ancient sea This is integral to the character of the wines, contributing to their signature flinty minerality and bright acidity. The winery employs state-of-the-art facilities, including temperature-controlled stainless-steel tanks ranging from 10 to 300 hectolitres, allowing for precise vinification. Some cuvées are aged in a cellar housing over a hundred 350-litre barrels, ensuring optimal conditions for each wine's development.
