Tasting Notes
The palate has both ripe blackberry and raspberries with violet notes on the nose. It is extremely perfumed with softly integrated notes of oak on the long finish.
Wine Making
The winemaker is Joshua Mason. The cabernet grapes are hand picked and naturally fermented using Indigenous yeast. The maceration is hand plunged 3 times daily for 10 days creating a thick and juicy texture. The must is then basket pressed and placed in 15% new French oak before American oak for 3 weeks. It is barrel fermented for 15 months.
